Fish Tacos
Fish Tacos. YUM. On occasion, when I mention to others we're having fish tacos, I get a curl of the lip or raise of the eyebrows as if to say "ick". But I'm telling you they ARE good. Really, really good. It's a favorite around here for sure. If I ask for suggestions for the weekly menu, this is always requested. The real beauty in this dinner is the simplicity. All you need is fish. Yep, everything other ingredient is preference. Whatever veggies, toppings, and sauces you like! Here's how we do it on the farm...
FISH TACOS
tilapia (or any other fish, we like tilapia's mild flavor)
taco seasoning or Cajun seasoning (use whatever you like!)
soft tortillas
toppings might include...
lettuce, spinach, coleslaw, tomatoes, chopped raw onions, grilled or sautéed onions and peppers, jalapeños, guacamole, salsa, cheese, taco sauce, tabasco, ranch dressing, chipotle ranch, etc.
Season the fish by sprinkling taco seasoning or Cajun seasoning on it. Cook the fish however you prefer. I bake mine according to package directions. I have also pan fried it or cooked it on my large electric griddle. All good. I like the oven because I don't have to stand over it. While your fish is cooking, chop or cook any other veggies you want for toppings. I cook rice and beans while my fish is in the oven. When your fish is done it will be white and flakey when pulled with a fork. If it looks translucent at all, it's not cooked thru. Mine usually takes about 10 to 15 minutes. After my fish has cooked, I will use a fork or to break it all up. I use to leave it whole or cut the filets in half but it seems that if it's chopped up, it goes further. That is why you see all my fish in a bowl in the picture below. We buffet style this dinner. Lay it all out and let everyone go thru adding whatever they like. Rice and beans are great on the side too. Very simple meal with fresh ingredients. SO GOOD and perfect for summer!
